How Is Traditional Bilona Ghee Made?

The traditional process can be broadly understood in four stages:

1. Fresh Milk

Milk is collected and prepared for the traditional process.

2. Curd Formation

The milk is naturally cultured and converted into curd.

3. Traditional Churning

The curd is churned using the traditional Bilona method to separate butter from the buttermilk.

4. Slow Cooking

The collected butter is slowly heated until it transforms into aromatic golden ghee.

This careful process gives traditionally prepared ghee its distinctive aroma, flavour and texture.

Why Does Bilona Ghee Have a Different Texture?

One of the most noticeable characteristics of traditionally prepared ghee is its texture.

Depending on temperature and storage conditions, ghee can naturally become liquid, semi-solid or completely solid. It may also develop a naturally grainy texture.
